Some fish that is used for nigiri sushi is commonly cooked. For example, it is unusual to be served raw prawns, although I have had raw prawns in Japan, which is called amaebi or "sweet" prawns. Even in Japan, though, cooked (boiled) ebi sushi (prawn sushi) is what is usually served.

I prefer cooked prawns for their taste, texture and pink color.
